This time of year always leaves me with extra apples to use up. I am not complaining. Sauted in a little butter and cinnamon, apples are fantastic on their own. Paired with the nutty flavor of quinoa and a little brown sugar, you won’t even believe how delicious!

This apple cinnamon quinoa came about as I was looking for other ways to add healthy grains into my diet.

Different Variations:
You can substitute the brown sugar by sweetening with maple syrup.
Keep the brown sugar and drizzle maple syrup on top.
Use your favorite apple variety.
Serve warm with a dash of heavy cream, or milk on top.
Eat alongside a scoop of vanilla ice cream for a delicious dessert.

Simple Apple Cinnamon Quinoa
Ingredients
- 1 cup quiona Cook according to packaged directions.
- 2 tbs butter
- 1.5 tsp cinnamon
- 2 apples diced
- 1/4 cup brown sugar
Instructions
- Cook quinoa according to package directions.While quinoa is cooking, dice up 2 apples and sauté them in 1 tbs butter for 3 to 4 minutes until soft. Sprinkle with 1/2 tsp cinnamon and set aside.When the quinoa is finished cooking, mix in the other tbsp butter, 1 tsp cinnamon, apples, and brown sugar. Serve warm.
