This simple apple cinnamon quinoa is a protein packed breakfast that will keep you full and satisfied. I love this sweet alternative to the usual ways of making quinoa. The fresh sauted apples paired with cinnamon and brown sugar make for the most delicious, hearty breakfast, or even desert. I hope you try it an love it as much as my family does!

This time of year always leaves me with extra apples to use up. I am not complaining. Sauted in a little butter and cinnamon, apples are fantastic on their own. Paired with the nutty flavor of quinoa and a little brown sugar, you won’t even believe how delicious!

This apple cinnamon quinoa came about as I was looking for other ways to add healthy grains into my diet.

Quinoa is a plant based source of protein as well as fiber, antioxidants and iron. You can read about the many health benefits here. It’s like eating a whole bowl of vitamins!

Other reasons I love this simple apple cinnamon quinoa:

It comes together quickly. By the time the quinoa is cooked, I can have the apples sauted and ready to throw in.

It makes for a warm breakfast on a crisp morning.

Keeps you full until lunch time.

Similar to oatmeal, but a fun way to mix it up.

Such an easy recipe, you can’t mess it up!

Different Variations:

You can substitute the brown sugar by sweetening with maple syrup.

Keep the brown sugar and drizzle maple syrup on top.

Use your favorite apple variety.

Serve warm with a dash of heavy cream, or milk on top.

Eat alongside a scoop of vanilla ice cream for a delicious dessert.

Simple Apple Cinnamon Quinoa

This delicious apple cinnamon quinoa makes for the perfect fall, or any time breakfast!

Ingredients
  

  • 1 cup quiona Cook according to packaged directions.
  • 2 tbs butter
  • 1.5 tsp cinnamon
  • 2 apples diced
  • 1/4 cup brown sugar

Instructions
 

  • Cook quinoa according to package directions.
    While quinoa is cooking, dice up 2 apples and sauté them in 1 tbs butter for 3 to 4 minutes until soft. Sprinkle with 1/2 tsp cinnamon and set aside.
    When the quinoa is finished cooking, mix in the other tbsp butter, 1 tsp cinnamon, apples, and brown sugar.
    Serve warm.
