I am not kidding when I tell you this is the best sourdough banana bread of all time! It is moist and puffy and amazingly delicious. By adding sourdough discard, this banana bread almost tastes like a cake with the moist consistency it adds. You will not be able to get enough!
The last time I made this, I took it to a neighbor’s house to eat for dessert. People kept wanting to try it before we even got to our dinner and the sourdough banana bread was gone before our dinner even began.

This recipe is easy! No need to dirty two bowls. You can literally dump in all the ingredients and mix, then bake.

This recipe bakes in an 8X8 cake pan and creates two loaves when cut in half and then into slices.
Can be mixed in a mixing bowl, or by hand.

I originally made this recipe using 2 loaf pans, and then got the idea to try an 8X8 cake pan when I learned that the uber inspirational Joanna Gaines bakes her’s in one. And let’s be honest, she can do no wrong!

This recipe is very forgiving. The recipe calls for 4 ripe bananas, but I have made it with 2, and it’s just as delicious.
Enjoy it plain, or warm with butter on top. Either way, you can’t lose!
Directions:
Pre-heat oven to 350 degrees, and line your pan with parchment paper, or grease it well.
In an electric mixer, or regular mixing bowl, add 4 ripe mashed bananas.
Mix in eggs, vanilla, oil, and sugar.
From there, mix in the baking soda, salt and flour.
Once all the ingredients are combined, it is ready to bake. Or, if you want to add chocolate chips or nuts, now is the time to mix them in.
Pour mixture into your pan, sprinkle with sugar, and bake for 60 minutes.

Slice and enjoy warm with butter, or store in a bag for up to 3 days. Freeze for up to 3 months.
