Honey Lime Chicken Enchiladas
Honey Lime Chicken Enchiladas have been a dinner staple in our home for years. A cozy, delicious family favorite that can be put together in minutes for an easy weeknight dinner.

- 3 cups Cooked Shredded Chicken or 3 large chicken breasts cooked and shredded
- 1/4 cup Honey
- 1 tsp chili powder
- 2 whole fresh limes
- 1 small can green enchilada sauce
- 3 cloves minced garlic
- 1 cup half and half can substitute with heavy cream
- 2 cups shredded cheddar can substitute for pepper jack, or colby jack
- 8 flour tortillas
Bake and shred 3 cups chicken.
Add honey, lime juice, garlic, and chili powder to cooked chicken and mix well.
Mix in 1 cup of shredded cheese to chicken, and set aside the other cup to sprinkle on top.
Add chicken mixture to each tortilla and place seam side down to a greased 11 X 13 baking dish.
In a separate bowl, combined half and half to one can of green enchilada sauce.
Pour enchilada sauce mixture over the top of your filled tortillas and top with the rest of your grated cheese.
Place in a pre heated 350 degree oven and bake for 30 minutes, or until cheese is melted and bubbly.
