Honey Lime Chicken Enchiladas have been a dinner staple in our home for years. A cozy, delicious family favorite that can be put together in minutes for an easy weeknight dinner.


The sweet pairing of honey, lime, chili powder and a little bit of garlic make this a meal worth eating over and over.

Why We Love this Honey Lime Chicken Enchilada Recipe:
This is a go to recipe for when I need to take a meal to a neighbor or friend.
Comes together very quickly and everyone loves it.
It is affordable.
It tastes just as good, if not better heated up as leftovers.
The mixture of half and half (or heavy cream in this case) with the green enchilada sauce gives it the perfect creaminess.

The chicken doesn’t have to be marinated before hand. Just mix in the lime juice, and honey and seasonings to already cooked chicken.
This is the perfect way to use the shredded chicken I posted about in a way to meal prep using an Instant Pot.

You could also save a step, and use a rotisserie chicken.

Tip: If you aren’t using chicken that is already warm from just being cooked, heat it up for a bit before adding honey, lime, garlic, and chili powder. This helps the chicken absorb all the flavors a bit more.
This dish tastes delicious with a side of chips and salsa, a salad, or even rice and black beans.

Honey Lime Chicken Enchiladas
Ingredients
- 3 cups Cooked Shredded Chicken or 3 large chicken breasts cooked and shredded
- 1/4 cup Honey
- 1 tsp chili powder
- 2 whole fresh limes
- 1 small can green enchilada sauce
- 3 cloves minced garlic
- 1 cup half and half can substitute with heavy cream
- 2 cups shredded cheddar can substitute for pepper jack, or colby jack
- 8 flour tortillas
Instructions
- Bake and shred 3 cups chicken.
- Add honey, lime juice, garlic, and chili powder to cooked chicken and mix well.
- Mix in 1 cup of shredded cheese to chicken, and set aside the other cup to sprinkle on top.
- Add chicken mixture to each tortilla and place seam side down to a greased 11 X 13 baking dish.
- In a separate bowl, combined half and half to one can of green enchilada sauce.
- Pour enchilada sauce mixture over the top of your filled tortillas and top with the rest of your grated cheese.
- Place in a pre heated 350 degree oven and bake for 30 minutes, or until cheese is melted and bubbly.
